In this video, we’ll be diving into the rich and flavorful world of Trinidad Parsad, a beloved sweet treat enjoyed across Trinidad and Tobago. This delightful dish is perfect for special occasions or just as a sweet snack at home.

What is Parsad? Parsad is a traditional Trinidadian sweet, often made with ingredients like flour, sugar, and coconut, infused with a blend of spices. It’s a cherished part of the culinary heritage in Trinidad, perfect for celebrations, religious events, or simply to satisfy your sweet tooth!

Parsad Recipe

Ingredients
Water - 3 cups
Granulated Sugar - 1 1/4 cup
Evaporated Milk - 250 ml
Condensed Milk - 350 g
Mixed Essence - 4 tsp
Cinnamon - 1 stick
Minced Ginger - 1 tbsp
Assorted Raisins - 1 cup
Cardamom Powder - 1 1/2 tsp
Anchor Cow Brand Ghee - 400g
Flour - 4 cups (sifted)

Method
 1.⁠ ⁠Heat sauce pot over medium heat.
 2.⁠ ⁠Add water and sugar and mix until sugar is fully dissolved.
 3.⁠ ⁠Add evaporated milk, condensed milk, essence, cinnamon, ginger, raisins & cardamon.
 4.⁠ ⁠Whisk until everything is fully incorporated.
 5.⁠ ⁠Once fully incorporated, stop whisking and allow mixture to heat up to the point where bubbles begin to form on the edges of the sauce pot.
 6.⁠ ⁠Set aside.
 7.⁠ ⁠Heat another sauce pot over medium heat.
 8.⁠ ⁠Add ghee.
 9.⁠ ⁠Once melted, whisk in flour.
10.⁠ ⁠Continue whisking to remove any lumps and to cook the flour.
11.⁠ ⁠Do this for 10 to 15 minutes over medium heat.
12.⁠ ⁠Add your liquid mixture to flour and ghee and continue mixing with a spoon or heat resistant spatula until mixture thickens.
13.⁠ ⁠You want the mixture to remain a bit wet because the flour will continue to soak up the liquid while cooling.
14.⁠ ⁠Remove from pot and allow to cool.
15.⁠ ⁠Enjoy!

Great job Shaun. That is the way my mother in law made hers many many years ago. She just parched it less so it wasn't as brown..but at that colour you get a better nutty taste. Well done👌👌👌

Sean you are a boss, i have been making Prasad, since my mother died in 1993 but today in 2024, i used your recipe, and it is the best i have made and tasted if i may so myself.but i made 2 cups and i lessen all the other ingredients.thank you.

That Parsad looks MID at best. Weird people thinks he nailed it. I take it you guys haven't tasted really good Parsad with a good texture and good flavor.

Thanks Shaun... looks easy to try. What if I don't have ghee? Can I use kerrygold butter? Ghee is expensive 😊
