I think Saitama got his power not only from training.
Like, fighting different types of monsters for fun. And use their bodies for enchantment. Like we see him cooking monster like to grow hair.
And when he face someone who is stronger than him. He put all he got whatever he got to win and eventually broke his limits.
I think it his desired to be the strongest.

All I could do was 100 push-ups and believe it or not 1000 squats but I can’t do sit-ups it’s very hard

The point of vanpunchman's training was not how many times to do, but that for him these trainings seemed like hell. You could say he died several times.

I actually started doing the one punch man challenge but I do it in sets. 20 push ups and 30 sec rest then 20 more etc until I reach 100 same with sit ups and squats, but I replaced the impossible but probably possible 10k run with 1 or 2 hours of shadow boxing or punching the bag at my dads. Day 3 and I'm sore asf so I'm resting to get back too it as soon as possible. WARNING TO WHO EVER READS THIS, don't do the Saitama challenge with 100 even in individual sets like me if your new too working out before I myself started the challenge I've been doing literally 20 push ups, 20 sit ups, and 20 squats a day not only that been pumping iron for 2 years already as well. Start off slow with the challenge then actually do it, shi makes you strong as hell no cap.
