M&M'S Mini Red Velvet Cheesecake Bites

Like decadent truffles, these red velvet cheesecake bites are fun and easy to make.

Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hour (+ 2 hours 30 minutes standing time)
Makes: 12

Ingredients:

1 pkg (15.25 oz) red velvet cake mix
1/2 cup cream cheese frosting
3/4 cup M&M’s White Cheesecake, divided
3 oz white chocolate chips, melted
2 tbsp Valentine sprinkles

Instructions:

1. Prepare and bake cake mix according to package directions. Let cool completely. Crumble 2 cups of the cake (reserve remaining cake for another use).
2. In large bowl, beat together crumbled cake and frosting until dough starts to form. Stir in half of the M&M’s White Cheesecake.
3. Divide dough into 12 portions; roll each portion into ball. Transfer to parchment paper–lined tray; freeze for 15 minutes or until firm.
4. Place melted white chocolate in bowl; dip each cake bite into chocolate, allowing excess to drip back into bowl. Roll in remaining M&M’s and sprinkles until coated. Return to parchment paper-lined baking tray; refrigerate for 1 to 2 hours or until completely set.

Tips:
• If desired, make cheescake pops by dipping the tips of lollipop sticks into melted chocolate and inserting into each cake ball before dipping in chocolate.
• Substitute white or vanilla cake for red velvet cake if preferred.
