Ok made it, the only thing I did different was I melted butter and added it to the olive oil, ( love the two together).. Incredible dinner thanks Joe

I had a, get this, hot dog (sliced lengthwise) with roasted red pepper and spinach panini, from one of those autostrada rest stops in Italy and it was the best hot dog I ever had!

This sandwich is miles ahead of most American sandwiches! However, not sure what part of Italy this recipe might be from, but I was just there for a month from Firenze, Roma, Napoli, and and a bunch of towns in Puglia and I did not see one panino being heated or a panini maker for that matter. All bread was fresh from the day, usually arugula, not basil, never with sauces, mayos or anything. Yet, they had so much flavor!
For chef Joe, maybe you could work on the pronunciation for mozzarella, prosciutto, etc. And, panini is plural, panino singular.

I have a Polish Panini maker. A cast iron grill pan and a smaller cast iron pan as a weight. Granted you have to flip it once but it works lol :o)

ued to make CUBANOS at a place I worked a long bun roast pork ham mustard and a pickle used a press on it
