I just LOVE focaccia, I tried so many variations ! Here's my personal favorite: A little bit of olive oil, some brie, a few slices of pear, honey, and just a tad bit of cumin. Another one, way heavier, is with proscuitto, red pesto, dried tomatoes, origan and parmigianno.

I have a plain old fashioned press. It's a rectangle metal weight with a wooden handle. I love it for anything from keeping bacon from shrinking, to grilled sandwiches and grilled fruits. That way I don't have to press down on anything myself. And there is one less gadget, like a panini press around, if you have a small kitchen.
