What I always recommend to people to understand why these loops are placed like this is to try to rig a face you created! Grab one of available "auto-riggers" that have facial rig option (like Rigify for Blender or Advanced Skeleton/mGear for Maya) and try to place joints and weight paint your own creation - seeing how the deformation works and how proper loop placement can make some things like closing an eye properly impossible is (pun not intended) an eye-opening experience. You don't need to do it perfectly, compatible with pipeline or anything, just playing around with it is awesome :)

Considering im making low poly stuff for my indie stuff i just throw topology in the easiest fastest and most convenient way, i don't have time for this loopty doopty stuff. Don't really need it anyways.
