RED VELVET CREPES
These red velvet crepes are simply amazing . They are not too sweet on their own . But once you fill them with strawberry sauce whipped cream and chocolate sauce they have perfect amount of sweetness. The strawberry sauce gives each bite an unexpected surprise.These Red velvet crepes are perfect for any special morning
YIELDS: 4 Servings (2 Crepes Each)
And of Course, you can always double or triple the recipe if you’re serving a group
INGREDIENTS
FOR CREPES
1 ½ Cup Whole Milk
1 Egg
1 Tsp Vanilla Essence
1 Tbsp. Oil
1 Cup All Purpose Flour or Maida
1 Tbsp. Coco Powder
1-2 Tbsp. Sugar
Pinch of Salt
1-2 Tbsp. Red Color
FOR ASSEMBLING CREPES
Whipped Cream
Chocolate Sauce
Strawberry Sauce
Fresh Strawberries
TIPS
1) Refrigerate the batter for minimum of 2-3 hours; preferably overnight. Refrigerating the batter relaxes the gluten and makes for light and airy crepes.
2) Use a heavy bottom non stick pan. Set your heat to medium and let the pan get just enough hot; not too hot otherwise the batter wont spread to the edges of the pan before setting and may result in uneven thickness.
3)For thin and lacy crepes, add only 2-3 Tbsp for 7-8 Inch pan & ¼ Cup for 9-10 inch pan.
4) Don’t flip the crepes too early wait until top of the crepes losses its gloss and edges look dry. If you flip the crepes too early they will tear.
5) When the crepes are ready to flip. Loosen the edges with the help of the spatula. And carefully lift an edge and peel the crepe up, then gently flip. Take care that you don’t touch the hot pan. If you are not comfortable using fingers then use a spatula.
SUBSTITUTES
STRAWBERRY SYRUP
¼ Cup Strawberry / Raspberry Jam
1 – 2 Tbsp. Water
1 Tbsp. Sugar it required
In a medium sauce pan combine Sugar, Jam and water. Stir over medium heat until sugar is dissolved and the sauce is syrupy.
CHOCOLATE SYRUP/SAUCE
¼ Cup Chocolate Chips
1 – 2 Tbsp. Whole Milk or cream
½ Tsp Instant Coffee
In a small microwave safe bowl. Heat Milk /cream for 30 seconds .Remove
From microwave and add chocolate chips , coffee and stir until the chocolate is melted and smooth.
