This is my favorite thing to eat at family gatherings! Yes it's very basic but it's still delicious. The butter was to melt and mix with the cornflakes. I personally prefer the shredded potatoes and more cheese.

Also, I'm not sure what you had in SLC but as a former Mormon (tm), that doesn't sound like funeral potatoes as I knew them. It was always either sliced/scalloped potatoes or hashbrowns, not mashed hush puppy things, though the rest of the recipe was similar to what you did. And everyone called them funeral potatoes because they were an easy dish to throw in the oven and feed lots of people after a funeral service, but people would also bring them to pot lucks, give someone in the meal rotation after they had a baby, etc. So you'd show up to someone with a newborn and give them funeral potatoes - Mormons are a special breed 😂
