I have never thought to make it this way, but I like it and will definitely try this. We like cucumber sandwiches a lot. When my children were in elementary school I took a plate of these for a teacher appreciation luncheon. The Principal said he didn't know you could make sandwiches out of cucumbers : ) When we go on a hike, especially in warmer weather, cucumber sandwiches tastes so good after we are finished.
