I've been to HOPR at least 5 times so far. Everytime I'm amazed how good the prime rib is. I never get tired of this restaurant.

Parents grew up in San Fran and we make this exact thing for Christmas every year. Super cool seeing basically a dish that hasn't changed since the Victorian era

To everyone saying its raw it's not. The color comes from a mixture of water and a protein called myoglobin. When it breaks down it gives a red blood like color.
