It is not possible to generate rotaring magnetic flux using single phase
So we use Auxiliary phase and we bifurcate single phase AC by two path
Path1 no capacitor
Path 2 via capacitor
Capacitor leads current by 90 degree
So now we have two phases which are at 90 degree mechanical angle and two voltages at 90 degree electrical angle which is enough to make a rotarinf magnetic field and make the motor self starting

Thus we use capacitor

We could use Inductor but once fan switched off Inductor energy will be 0 but capacitor can store charge for years without leakage
