Bomba rice is what I like to use too, but there's also Senia, Bahia, Sendra and Albufera rice. They all qualify as good paella rices. And please, never squeeze the lemon juice on a paella Valenciana. The lemon is used after the meal, to weaken the pan from charred and fatty pieces. Also, it's not new that sausages are used in a paella. There are traditional paellas made with longaniza and other type of sausages. They're very good if you know how to cook them. There's no sin in using chorizo de sarta. It doesn't overpower the paella. In fact, there are gatherings in Valencia where they cook these traditional recipes as a contest.

8:10 what are you saying? Spanish always add onions in their paella when making a sofrito, which main ingredients are garlic, onion, sweet peppers, and tomatoes. Ofc you never put onions directly into a dish

The paella in the thumbnail contains green peas. You even mention the list of essential ingrediënts but clearly you didn't bother to read any of it.

Lovely video, perfectly explained, so glad to see this misconceptios adressed for poeple out of Spain. Just one note, though eating directly from the cooking pan is the traditional and desired way, it is not a crime to serve it on plates. Sometimes you actually have to if people cannot reach the paella (sitting at a rectangular table for example). Other cases like one I had, I once cooked a paella for over 80 people (I used one single huge cooking pan instead of many small ones), so naturally I had to use plates to serve, so don't be harsh on yourselves for that matter 👍.
P.S.: The pan where the dish is cooked is also named paella, hence its name.

Isn't a sofrito containing onions a common ingredient in paella? Or are you saying not to use larger pieces of onion?

You are 1, 000% WRONG on the “time of day” - paella is served ANY TIME in Spain. I’ve been to small villages to large cities over months of travel & it is THE go to dish there. Period

I’m using onion, chorizo, chicken and mussels, no saffron. I hope the majority of you will have nightmares because of it. 🤣🤣🤣😘

If making a video about authentic paella, at least get the pronunciation right. It is not Pa-Yay-uh. The closest you can get in English is Pa-eh'-Yah.

QUESTION; I have read that there are various types of Paella. A meaty version in the interior and a seafood one
on the coast. Some using rabbit or chicken and even sausage. Was I mis-informed?

This will save lots of time, and on the balance money since though more should go to saffron, less will be wasted in throwing food away! Not only that now I can spot a bad Paella recipe a mile away.

This video makes paella sound like the cuisine equivalent of pandas: too fragile to exist.

It's rice, broth, spice, and some sort of animal flesh, not a ship in a bottle. It'll still be good if you put it on a plate.

She’s talking rubbish, I lived in El Palmar, Valencia, where the paella originated, and all the chefs there put onions and garlic in this tasty meal. Americans no zilch about authentic European food recipes.
