🥛💧 Milk Kefir Grains vs. Water Kefir Crystals 💡

Two incredible probiotic powerhouses: Milk Kefir Grains and Water Kefir Crystals. 🌟

🥛 Milk Kefir Grains 🥛
These unique grains, despite their name, aren't actually grains but rather a symbiotic culture of bacteria and yeast (SCOBY). They resemble small, gelatinous clumps and have been used for centuries to ferment milk into a tangy and creamy beverage known as milk kefir. These grains thrive on lactose, the sugar present in milk, and convert it into lactic acid, giving milk kefir its distinctive tangy taste. Milk kefir is not only delicious but also packed with beneficial probiotics that can promote gut health and boost our immune system. 🌈

💧 Water Kefir Crystals 💧
Also known as tibicos. Unlike milk kefir grains, these crystals are translucent, irregularly shaped, and form in a sugar-water solution. Water kefir crystals are too a symbiotic culture of bacteria and yeast as well, but they have adapted to feed on the sugars present in the solution. As they ferment, they produce carbonation and create a delightful, lightly effervescent beverage, often referred to as water kefir. While water kefir doesn't have the creamy texture of milk kefir, it offers a refreshing and slightly sweet flavour profile with a wide range of potential flavour variations. 🍹

🔄 What Sets Them Apart? 🔄
The primary difference between milk kefir grains and water kefir crystals lies in the medium they require for fermentation. Milk kefir grains prefer a dairy environment and excel at fermenting milk, whereas water kefir crystals thrive in a sugar-water solution. This distinction determines the base liquid and the resulting taste and texture of the fermented beverage. Additionally, milk kefir grains contain different strains of bacteria and yeast compared to water kefir crystals, contributing to distinct probiotic compositions and potential health benefits.

🌍 Expanding Our Fermentation Horizons 🌍
Both milk kefir grains and water kefir crystals offer incredible opportunities to explore the world of fermentation and create delicious, probiotic-rich beverages. They are versatile, allowing for various flavour experiments by incorporating fruits, herbs, or spices during the fermentation process. So, whether you're a fan of creamy milk kefir or prefer the lighter, effervescent touch of water kefir, there's a fermenting adventure waiting for you!

In wather kefir the sugar added will be transformed in alcohol in a small portion.
With a double fermentation the alcohol increase and the taste too 🤗

is milk kefir fermentation an aerobic or anaerobic process? As in, should you keep the jar covered with a lid or with a cotton towel?
