Here's another tip, if you want to bring out that fresh fish flavor. Place your Tuna on a pan, salt the one side, flip it over and salt the other. Take Saran Wrap
wrap it around the tray, and place it in the fridge slightly tilting the tray for 15-20 mintues. This allows the less flavourful fish taste to be expelled through the salt, afterwards fill a bowl with cold water and ice cubes, take the tuna out and give it an ice bath, rubbing off the salt, afterwards, clean the tray, rewrap the tuna and place it in the fridge for another 30 mintues, this will allow the now fresher hidden fish flavours to come out. Making your sushi, that much better
