The ability of both the operating system and application to efficiently divvy out tasks across multiple cores is the limiting factor. And many applications (Audio being foremost) require fast single core as a preference over multi core. A faster single core almost always wins in the real world.

A question. A m2 air the way I want it 16/1 tb, runs 1899. A binned 14 inch pro 16/1 tb is 2199. The big boy 10 core 2499. In the end is the better screen and faster ssd worth 300 to 600 more? I think 300 more is worth it not sure about 600. Thoughts please.

In a perfect world, you are right, but unfortunately, it's a wrong analogy because, in reality, it all depends on the applications running. Most apps use a single core anyway. So, yes, you can run multiple apps, but that won't make them any faster, even if the CPU has more cores.
