as a Persian cook, i approve. but you really don't need that much butter and oil. in fact, we don't use butter for cooking rice we use it for serving it. we only use vegetable oil when we're cooking rice or any kind of khoresht.
and just to avoid the confusion, tahdig is just the crispy part of the rice. the rice itself (only if it's cookes the way you did) is called katte. there's two other kinds of rice based on the method of cooking and each should have a different kind of tahdig. polo, and chelo.
and if you mastered the art of the perfect tahdig, you can challenge yourself and try to make a tahchin.

The water from cleaning the rice is great for houseplants. Dilute by half with regular water, you can use every other week. Plants love it. Good for garden plants also!)

You two are the cutest. I wish I did video documentary through my culinary school journey.
I’m a mom and a decade past college, but this page makes my heart so warm.
Ah I can’t get over how absolutely adorable this video is.
And perfect dish to boot.
Keep up the energy.

I have been making this for years without knowing the name for it! My uncle is Persian and taught my mother how to make it, he got her a rice cooker that we literally just used for this kind of rice. I was given said cooker when I moved out and my friends are always blown away by how delicious this is, but I never knew the name for it; in our house growing up we just always called it “lecker reis” (tasty rice in German) to differentiate it from regular rice 😂 I finally know the right name for it!

I'm Puerto Rican and we call it pegau I love the way Dominican culture calls it, concon. If the beans are seasoned right and has the right consistency it taste delicious over the concon with rice and a protein . Yes 😋 BTW, good work, concon looks the way it should, toasted. 👍
