My Iranian grandma makes it all in one go. Without removing from pot. Can just make little holes like you did.

You got it mixed up, "tah" means bottom and "dig" is pot

Where's your kitchen towel?? You need a towel to wrap the pot lid! 😢 That will absorb a lot of water condensation to prevent soggy rice.

We call this 'nu-rung-ji' in Korea, which means overcooked rice stuck on the bottom. This actually is the favorite part of many Koreans!! It's like a tasty bonus :p
1. We actually take plain cooked rice and make it like a brown crispy pancake. Sugar for extra yumminess
2. Also easily found on market as dried nurungji.
3. When you pour hot water in the hot pot with nurungji, it's called 'sung-nyung' It's a very common traditional dessert after Korean-style meal. It's often recommanded for sick people (or pregnant woman with morning sickness) like porridge.
4. There also is a savoury food named 'nurungji-tang' means nurungji soup. First you have deep fried nurungji and hot soup-usually contains seafood and veggies, thicked with starch slurry. Then you pour over the soup over nurungji- the sound it makes is pretty cool :)
5. Oh last but not least, many Koreans finish their meals with fried rice after bbq, and they enjoy the nurungji part of the fried rice so we often spread out the rice to get the maximun nurungji out of it:p
