I made these chocolate muffins yesterday, they were lovely but I can't resist John's recipe for blueberry muffins .used my home made vanilla essence I made over 6months ago, again John's recipe..it is so much better than the bought product, thank you John for fail proof recipes

Great method, great recipe - many thanks. For filling the cases, I use an ice-cream scoop, the mechanical kind. It gives the right and consistent measure and just plops into the case from a few inches above. No fiddling with the cases to keep them level!

I made yesterday. Very nice. Family enjoyed. Also very educational regarding reference to making own vanilla extract / essence.
Also educational re castor sugar or granulated sugar: self raising flour or plain flower: chocolate chip dark, or milk or white.
I would make again.

Ah yes I do remember that pink custard, it was so nice wasn’t it. I used.to love a ginger cake they made for school dinners that had icing on the top. I have never been able to find a ginger cake recipe that resembled it. It was much much firmer than a usual ginger cake, served width normal custard. So tasty. This goes back to the 60s as well.. Your muffins today looked very tasty as well. X thank you for sharing with us.
