INGREDIENTS
¾ cup uncooked quinoa1 ¼ cups water1 medium red bell pepper (diced) 3 mini cucumbers diced, or 2 cups2 plum tomatoes, or 2 cups 1 ½ cups chopped kale 1 cup canned lentils – green or brown (drained and rinsed)3 oz crumbled feta cheese (optional)¼ cup olive oil3 tbsp lemon juicesalt and pepper to taste¼ cup chopped cilantro or basil

INSTRUCTIONS
1. Bring water and quinoa to a boil. Cover and simmer on lowest heat for 15 minutes.
2. Chop red pepper, cucumbers and tomatoes into small pieces.
3. Place into bowl along with quinoa, kale, lentils, feta, olive oil, lemon juice, salt, pepper and herbs. Mix well. And enjoy!!
