Things will also be more mild because they are trying to avoid over seasoning that might make guests not like the food. You can always add more salt and pepper, etc but you can't take it out

Not sure if its because Lisa is in a hotel but Japanese cooking is notorious for using just enough seasoning to amplify the base flavor without overshadowing it. Sometimes their sweets can use a half teaspoonful of sugar and savory dishes can use a bit more aromatics. That's just my experience with food from my local Asian supermarket but I've heard light seasoning is very common in Japan.

That food looks GOOD. I love when food is minimal tasting and light. I love tasting a bit of everything instead of deciding on one main, heavy dish and not getting to eat the others.

Oh you stayed at Toyoko Inn budget chain!❤ It is an amazing place to taste the 'Obassan' Japanese home cooking and each outlet will do small customisation to the dishes to reflect the region speciality

Alot of my friends from japan LOVE australian potato chips, like salt & vinegar because they told me the flavours are stronger here. And that most jp brands have an ' As--Sarri ' taste /very light.

I, Japanese think Japanese food is more salty, less oily(?) compared to western food. Especially hotel's breakfast is often plain for some reasons😂 So if you wanna feel more Japanese culture, don't have hotel's breakfast(of course there's really good breakfast in expensive hotels), instead have convenience store(seven-eleven, LAWSON, family mart) 's meal. It's more delicious and you will find some Japanese interesting culture or technology. I recommend Onigiri which is originally separated from Nori(laver) and eat together when you eat. I think it's interesting.
