How to make Lebanese peas and rice (Bazela w ruz)

Peas with rice or "Bazela w ruz" as we call it in Lebanon, is a very traditional dish. It is comfort food, and one of the first dishes most new cooks learn to make. You could use frozen vegetables and create this meal at any time. Like most tomato paste based stews beef is optional and it is super easy to make this meal vegetarian/vegan.
