Cauliflower Fried Rice. Excellent Low Carb fried Rice

Cauliflower fried rice is an excellent, low carb alternative to regular fried rice. I'm going to show you how to make your own cauliflower egg fried rice at home.

Ingredients:
• 2 tbsp vegetable oil
• 1 onion peeled and diced
• 1 clove of garlic - peeled and minced
• 1 red bell pepper deseeded and finely chopped
• 2/3 cup (115g) frozen peas
• 1/2 tbsp sesame oil
• 300 g cauliflower - about 1 large head, grated/riced
• 2 eggs
• 2 tbsp dark soy sauce
• 1/4 tsp salt
• 1 tsp lemon juice

To Serve:
• 1/2 bunch of spring onions/scallions chopped

Instructions
1. Add the oil to a large wok. Add the onion and cook, stirring regularly on medium heat for 5 minutes until the onion starts to turn soft and translucent.
2. Add in the chopped red bell pepper, garlic and peas. Cook for a further 2 minutes, stirring regularly.
3. Now add the sesame oil and the grated/riced cauliflower and turn up the heat to high.
4. Use a spatula to toss everything together and to ensure the cauliflower doesn't stick to the bottom of the pan.
5. Once the cauliflower rice is hot (this will take about 3-4 minutes), push the cauliflower over to the side of the pan and crack the two eggs in the space. Add a little splash of the soy sauce to the eggs.
6. Making sure the part of the wok with the eggs in is over the heat, fry the eggs, giving a mix with the spatula until the egg starts to cook and look scrambled, but is still a little runny.
7. Now mix the egg into the cauliflower rice.
8. Pour in the remaining soy sauce and sprinkle on the salt and mix it all together.
9. Add the lemon juice, stir and taste. Add a little more lemon juice if required.
10. Divide between 2 bowls. Top with spring onions (scallions).

As asian I'd it's say it's 80% as good as rice but double the amount and half the calories, it's real good.

I just finished cooking this, and now eating it... THANK YOU, after a year and a half on keto, and 45 kg lost, I can finally have "rice" again. Actually, this is far better than rice! Both in flavour and, most importantly, in nutrition.

(I used shredded olives instead of peas, and extra virgin olive and coconut oils, also coconut aminos+turmeric instead of soy sauce, and some cayenne pepper to give it some "punch")

I used to hate cauliflower but frying it totally transform the taste and smell! This recipe is amazing and you can use it as a replacement for rice, potatoes, pasta and it's alot healthier! It more or less saved my keto diet progress

This was absolutely outstanding! I made a big batch and had about half left over. Traditional fried rice doesn't reheat well. The rice always gets hard. But this reheated beautifully. I left it in the same pan as I made it in and I didn't even have to add any oil. It may even have been better the next day. You would never know this was cauliflower instead of rice. Definitely a keeper that's going in my rotation! Thank you!
EDIT: I've since made this with diced cooked chicken and diced cooked pork.

First time I tried making cauliflower rice I used a box grater like she did. Never again. Take my advice just wash and chop up the cauliflower into chunks and pulse chop/grate in a food processor. So much quicker and less mess. Hand grating takes forever and little pieces of cauliflower fly all over. I also washed my cauliflower and let it dry in a colander for a half hour before processing. I cook it in a large cast iron pan with a tablespoon of olive oil with the cauliflower spread out in a thin layer. This prevents and sogginess and the cauliflower from steaming and get soggy. With a thin layer you are essentially drying it out slowly over a low to medium heat. Then after about 20 minutes I stir in any seasoning and butter to flavor or whatever sauce I want for flavoring. It comes out perfectly nice and firm and not over cooked and not mushy or soggy.

I've been serving cauliflower with spicy sauce dishes for years as a way of cutting down on carbs, and this is the first time I've come across a recipe. I'd never thought of grating it and doing it like fried rice, can't wait to give it a try. Lots of easy to follow, practical videos, thanks!
