He wasn't imprisoned behind a mountain, he was trapped UNDER the mountain, combined with a special charm to not let him lift it back up (since he can do that)

The buddha is not a person, but a state of mind. WuKong may be the strongest being IN the universe, but the Buddha transcended the universe by being one with the truth. WuKong cannot beat the buddha until he acknowledge the truth, which is that the buddha is also a part of him.

So many things wrong:

“The Jade Emperor gave Sun a job guarding peaches because he was impressed” - No, the Jade Emperor was worried about what Sun would do if he was bored.

“Sun saw the job as an insult” - Sun actually liked his job guarding the peaches

“He ate the peaches as an act of rebellion” - No, he was addicted to immortality and couldn’t resist, or he was drunk

“He was imprisoned behind a mountain” - I’m assuming you meant beneath

The Journey to the West is basically a really wild D&D campaign settled in ancient China. Sun Wukong is the min-maxing experienced power gamer, Tripitaka the poor newbie who always ends up getting kidnapped, Sand Monk just tries to get along with everyone while Pigsy almost ruins every mission because he can't let go of his personal beef with Wukong and just wants the campaign to be over asap. And the poor DM always has to come up with random bullshit to stop Wukong from getting even more OP than he already is. And the dragon horse is that one guy who only came to one or two sessions and never showed up again.

This is what heard from somewhere else: Buddha ended up tricking Wukong by making a bet.
Buddha said: if you can jump from my hand you win.
Wukong accepted and jumped to the edge of existence he wrote his name on a pillar to prove he did and when he went back to Buddha he believed he won the bet.
Buddha said he already lost, because he achieved Nirvana and became one with all of existence, Wukong never truly left his hand. Then he showed a part of his hand where Sun Wukong wrote his name.

Fun fact: The Monkey King has immortality stacked 7x so it's impossible to kill him unless you can trap him or use a special poison on him.

Funfact: buddhas omnipresence in the mythology was proven during this event, buddha challenged wukong basically saying “if you can jump out of my hand you win” so wukong literally jumped all the way to the end of the heavens and as evidence he decided to write his name there, he then returned to buddhas hand and was like “heh i win” then buddha showed the exact writing wukong had written and it was right on his hand, this is because buddha is everywhere in the mythology everywhere you go is “buddha”

Sun Wukong isn't a real Chinese diety, he's a character from a story called "the journey to west" by Wu cheng. This fantasy graphic novel was written in the 16th century. Remember folks even back then people wrote books that were pure fantasy, not all ancient stories are from ancient religious mythologies. Graphic novel have existed for centuries. Allot of people dont know that Sun Wukong is not official mythology figure but someone's fictional character.
