Easy Vegan Tzatziki

This Vegan Tzatziki is so delicious and smooth! It’s incredibly easy to make it, and it’s high on protein! It’s made with tofu and a few herbs and a bit of lemon juice and some love, and there you have it!

Ingredients:
1/2 block medium-firm tofu (225g), drained

1 teaspoon dried dill

1 teaspoon apple cider vinegar

2 fat cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon salt

A pinch of black pepper

1/2 cucumber

Method:
1. Add everything but the cucumber to a blender or a food processor and pulse several times until smooth stopping to scrape the sides as needed.

2. Slice the cucumber in half lengthwise then scoop out the seeds and discard (or save and toss into a smoothie later). Grate the deseeded cucumber. Add the cucumber by picking it up by the handful and squeezing out excess water over the sink, then adding it to the blender or food processor.

3. Pulse a couple of times to incorporate.
Serve it as a dip, or inside a pitta bread with some falafels!
