Chickpeas with spinach in tomato sauce -- Ρεβίθια με σπανάκι και ντομάτα.

Ingredients –
3 cups chickpeas
2 bunches of spinach or celery in pieces
½ cup olive oil
1 onion, finely chopped
1 ½ tbsp tomato paste
2 tbsp vinegar
1 ½ tsp Salt and 1 ½ Pepper (Depending on your preference).
1. Clean and wash the chickpeas thoroughly. Soak them in fresh water overnight, removing their skin. Then, rinse well, place in a saucepan of cold water and simmer. Remove the saucepan from the heat, change the water and allow to simmer further until soft.
2. In another saucepan, heat the oil.
3. Slightly sauté the onion and the spinach/celery.
4. Pour in the tomato paste.
5. Season with salt and pepper and add the chickpeas and the vinegar.
6. Cover with water and allow to simmer until the sauce thickens.
7. Serve hot as a main dish.
