I don't use a micro-bevel with this system. A micro-bevel is useful to quickly re-hone the very tip; less metal to remove. Since the stone puts on a concave surface, you can either go back to the stone to quickly hone, or use a flat stone or strop which will only touch the very front edge, making it extremely quick.

Doesn't the wheel grind a concave into the steel?

Yes! Obviously that doesn't matter to the wood as the very front edge of the steel is all that does the cutting. The benefit though is that you can quickly hone that edge on a flat stone since you only remove metal at the heel and toe, which is a lot less steel to hone than the entire bevel.
