I hope you can answer this, but is it that only when using TCP protocol we establish a session since it is persistent, but when we talk about a UDP connection, there is no session, because it is not a persistent connection it is a one and done type of connection. Or is the session layer still relevant for UDP?

I'm being confused between Layer 4 and 5,

Session is I guess kind of a conceptual or virtual layer. From a software point of view it represents a connection (I/O pipe) to another machine but does not get involved in how data gets there (IP, Network layer) nor how the link is set up or how reliable it is (TCP, UDP, RDP, etc, Transport layer).
