Having these homemade baking mixes on your pantry shelves will make life so much easier! You control the ingredients and you control how many servings you keep stocked. It's an excellent step towards decreasing your reliability on the commercial food industry.

Muffin Mix Ingredients - 4 servings of approx. 1 dozen muffins
8 cups all purpose flour
1 cup sugar
3 tablespoon baking powder
3 tsp salt

To prepare approx. 1 dozen muffins
2 1/4 cups muffin mix
2 eggs
4 tablespoons melted butter
3/4 cup milk
*Whatever other ingredients you want ex. chocolate chips, mashed banana, etc.*

Basic Cookie Dough Mix Ingredients - 4 servings of approx. 1 dozen cookies
6 cups all purpose flour
3 cups brown sugar
2 cups white sugar
4 tablespoons corn starch
4 teaspoons baking soda
4 teaspoons salt

To prepare approx. 1 dozen cookies
2 3/4 cups dry mix
3/4 cup unsalted butter - room temp
2 eggs
1 tablespoon vanilla
*Whatever other ingredients you want ex. chocolate chips, m&m's, nuts, etc,*

Hot Cocoa Mix Ingredients - makes approx. 16 servings of hot chocolate
3 cups powdered milk
1 cup unsweetened cocoa powder
1/2 cup fine sugar
Little sprinkle of salt

1/4 cup hot cocoa mix makes a regular mug of hot chocolate!

Sorry I didn’t include the baking temps and times in the description. Here you go!

Cornbread: 400° for 20 minutes
Brownies: 350° for 23-30 minutes depending on pan size
Cookies: 350° for 10ish minutes
Muffins: start at 425° bake for 5 minutes and then without opening the oven door, drop to 375° for another 10-12 minutes. This is how I bake all my muffins.

I am 74 and have made my own cocoa mix for many years. I combine 4 cups of organic sugar and 6 cups of organic cocoa. I put the sugar in a container and sift the cocoa into it, then just stir the 2 together. I keep it in a ceramic crock. To use, I add a heaping tablespoon to my mug and add about a half inch of scalding hot water and stir well. I fill the mug up with 1% milk and microwave to the temperature I desire.😊

For brownies, add 1 tablespoon of instant coffee to the dry mix. You can’t taste the coffee but it deepens the chocolate flavor.

Tip for measuring flour: Do not scoop with the measuring cup; you’ll end up with more than you need by weight which will make your baked goods too dense or dry, depending on what you’re making. Use a spoon to fill the cup to overflow and then level it off with the flat edge of a butter knife.

I learned this technique from my grandmother.

I've been using the Make a Mix cook books for decades. One of the biggest things I like is the taco seasoning because I control the salt and no don't add sugar. Love homemade mixes!

A tip to extend your shelf life freeze your flour & cornmeal for 3 days it will kill any meal bugs that maybe in the flour and cornmeal.

Love it! Use a canning funnel to fill the small mouth jars. Good way to avoid bio engineered foods!

The jar with the veggies on it was sold at Walmart in late 70s and early 80s in usually sets of 3 or 4 as canister set. ARC France is their "Pyrex" style company.

For fine sugar, put regular granulated sugar in a blender or food processor. Whirl until you achieve the desired fineness. Beware: stay with the machine cuz if you whir it too long, it becomes powdered sugar.

I, use my canning funnel all the time! Even when I make soup, it’s the absolute easiest way to fill my tall containers, it just minimizes the mess.

I do the same thing, dry ingredients, for my biscuits. The recipe I have calls for self rising, which I almost never have. I have the 2 cups of all purpose, 3 tsp of baking powder and 1/2 tsp salt in a container. This is the dry ingredients needed for one batch of biscuits. I have 3 containers in my cupboard at all times. When it's time for biscuits, grab one container and in about 10 minutes their ready for the oven. Thank you for your "grab and go" recipes.

I like to make my mixes in quart jars with enough space to prepare the mixes right in the jar. Very convenient for me!

For the muffin mix, you could take this all the way using powdered milk, powdered egg, and powdered butter. People who have freeze dryers could even make their own. When you have powdered fats of any kind, it reduces the shelf life a bit but it is much nicer to have a just add water mix. To give them as gifts it is nice to vacuum seal them in canning jars.

I have made hot cocoa mix for many years for Christmas gifts. Everyone really loves them. I’ve also made Chai Tea Mix, Brownie Mix & Chex Mix. I used to do a lot of baking but I’ve got back problems & these are so much easier & less time consuming. They go together very quickly & I put the mixtures in pint size or quart size jars depending on the size of the family. I’ve been married 48 years & I’ve done homemade gifts ever since I was first married. People appreciate homemade gifts so much.
