I want to talk about a food that’s showing up EVERYWHERE — I’ve seen it sold as crispy snacks, as a creamy spread… even as pasta. I’m talking about Chickpeas — also known as garbanzo beans. These beans have been a vegetarian staple for years… And they’re really trendy right now. So what’s the story about chickpeas — are they a superfood… or a superfad?

Thank you for clarifying this information. I had stopped eating them due to the lectins issue. But know according to your information I wasn’t wrong. I did placed them in water overnight, changing water and boiling them for a while. Know I will continue doing it the right way, and eating them once in a while. Thank you!! ☺️🙏🏼

Best way to enjoy the nutrients is to soak it in water overnight and boil them on low medium heat for 30min. Keep the water for tender meat and legume soup

Dear Dr. Gundry,
I am a french lady living in Mauritania. I completely changed my eating habits after watching your videos.
I was not aware about lectins. It is important as a vegan.
Thank you very much.

I love chickpeas. Delicious. Premade a big batch in a broth in an Instant Pot, drained them, then froze them in freezer containers.
Then just take them out and throw them into stir frys, pastas etc.

I soak them in water for 24+ hours.(4-6 changes of water) then pressure cook them for 30 mins. I ate canned chickpeas for convenience in the past and it was not kind to my autoimmune condition.

This is the first time I've heard the idea that pressure cooking can neutralize lectins. That seems like a very important point to make. I like oats and a lot of lectin foods are convenient and cheap, so more information on that idea would be killer. I could easily pressure cook my food, although a lot of the canning lids and materials seem toxic to me -BPA or formaldehyde lids and aluminium or nickel steal cookers. I like Gundry. You gotta listen or you can't be a doctor, sorry. EDIT: I found a great Gundry video on Pressure coolers on youtube; it's video gRTC-E58ChA .

I didn't know you were supposed to change the water! I've been cooking it in the same water I soak them in... ooops

I found some chickpea pizza crust and they barely fit in my pressure cooker so I think I'm going to go for it.

I like to soak mine in 2 to 3 changes of water then pressure cook them to neutralize the lectins. Yummy!!!

Does only pressure cooking get rid of the lectins or will just boiling work as well. I don’t have a pressure cooker.

What about chickpea protein powder? Does it have reduced or no lectins? Thanks

Aha the method you described is how they do canned chickpeas in my country so they were safe all along. Was about to be like don't tell me its another quinoa situation.

Thank you for the info! The 'EDEN' brand (assorted legumes) advertises that they pressure cook prior to canning. Are these types of legumes safe to eat? Thanks again for the valuable vids.

oh dear - my favourites/staples are all going out the window - black chia (while I soak them before adding to my water-based smoothie), chickpeas which have been my main for about 9 years, and man oh man - quinoa is out... I quickly need to do a course on what to do... I'm still in for actioning all these changes...
