I just made & it came out perfect...small tip add a little (1/2 Teaspoon) of Salt to bring out the flavor...no need for a beater 3 mins after taking it off the heat use a wooden spoon & mix thoroughly until it starts to get grainy...good recipe & good luck ppl

Made this a few times now. What she forgets to include is that you should boil the mixture at a medium-high temperature for around 1-2 mins only and then immediately bring the temp down to medium-low, and then cook for a further 20 minutes, gradually reducing the heat down to low. If you leave the temperature on high for 20 mins then you're just going to burn the whole thing.

I make this fudge several times a year for birthdays and at Christmas. My first few tries were not the best but I got myself a good heavy based pan and a thermometer and now it works every time. It does take about 20 minutes to get to temp, if you go too fast to get to 116C there will be too much moisture left in the mixture and it will set soft, if you boil it to temp too slowly there will not be enough moisture left at it will set hard and crumbly or go grainy. Once everything has melted and dissolved and it then starts to boil then start your 20 minutes boiling time stirring carefully all the time. I find it takes any where from 20-30 minutes. Then I put the pan on my granite chopping board to cool for 5 minutes before beating with the mixer. The mixer time can take around 5-8 minutes depending on your mixer speed. Works for me now every time. Good luck.

Do not follow this down to the t, especially when boiling the fudge for 20 minutes, your heat may not be the same as her heat. Just mix until it becomes thick or else you will end up burnt sugar and an extremely hard mixture which doesn't resemble or taste slightly like fudge. This happened to me first time round.

In the last few weeks I've watched 50 plus videos on baking & making food from chicken dishes to buns to croissants but when I watched this video on fudge I immediately wanted to make them so after watching it another 3 times I felt I was ready to make them.
I made them before work and left them to cool, that work shift was the longest ever and as soon as I got home I had the most delicious fudge I've ever tasted.
So if you go to make these start your heat hotter at the start and after 10 minutes turn down to medium high, my back got sore after 25 minutes stirring and at 35 they were done. Trying to get the fudge in the water to form a ball meant stirring slowed so some flaky bits appeared but I carried on and when I used the hand whisk these disappeared. Be careful putting it into the tray as the fudge is still really hot, and don't worry about cleaning the pots they magically become clean!

I make this fudge and I have been for about two or three years. There’s something different I always do though.
Here’s some tips.

Cool your fudge till it stops bubbling before mixing

If it seems like it won’t come together and is still thick, put some icing sugar in then heat the mixture up until it starts to bubble a little.
After that, take it off the heat and beat it instantly, then after 1 minute of beating pour some icing sugar in. Pour more and more till you get that gritty part in the video. (Don’t pour too much at a time as it could make the fudge too grainy even if you don’t notice it)

Guys 1 thing i think i should say is when your whisking it to get the texture is it takes longer than i expected it would, really good for myself and my family everyone enjoyed it, thanks

Works for me👍 after about 8-10 you start to notice it thickens a bit and I just keep adjusting the heat while stirring, as it first boils reduce heat to simmer for a couple mins otherwise it will boil over then just keep it at a medium heat for the remaining time and keep stirring slowly the whole time

I followed this recipe word for word-and it turned out beautifully! Near the end of the boiling stage, despite stirring like a maniac dark flakes appeared (burning) - but like magic by the end of the boil they had completely disappeared. The texture, flavour and colour was better than that which is bought in a sweet shop!

Add the vanilla extract to your mix on the boil, reduction will intensify the favour, also a handful of whit chocolate at the end will help if solidify and adds a creamy flavour to it, you’ll have to reduce the butter by 1/4 if adding white chocolate, the choc goes in when mix is cooked down too

I can't thank you enough for sharing this! I live in Honduras and I can't get fudge anywhere. They just have dulce de lech which is similar, but just not as creamy
