In this episode of In The Kitchen With Matt, I will show you how to make traditional fudge. This creamy old fashioned fudge recipe is so yummy. If you are a homemade fudge lover like me you have got to try this. I love all kinds of fudge, 3-ingredient microwave fudge, peanut butter fudge, cookies, and cream fudge, etc. My aunt gave this recipe to my mom in 1968, and I remember helping her make it when I was young. It is similar to a fantasy fudge. We always had it around the holidays. Creamy old fashioned fudge is more finicky than microwave fudge, but it tastes better to most people. If I can do it, you can do it. Let's get started and make some fudge from scratch!

Ingredients:
2 cups white granulated sugar (400g)
1/2 cup of butter, salted or unsalted (113g)
1 cup mini-marshmallows or 10 large marshmallows (50 to 60g)
2/3 cup of evaporated milk (158ml)
1 cup semi-sweet chocolate chips (or use milk or dark chocolate) (170g)
1 tsp. vanilla extract (5ml)
1 cup chopped walnuts (117g) (optional)

Tools:
Medium to a large pot, a heavy bottom is best
Wooden spoon or silicone spoon
Spatula
7x11 or 9x9 inch pan
Parchment paper or cooking spray
Knife

At one of the radio stations I worked at, we had a listener who would bring all of us on-air guys a pan of fudge every year....and I mean a pan for each of us. It was so creamy and addictive. We looked forward to Christmas every year just because of that listener. She never let us down and made us feel like her family.

I have been watching fudge videos for about an hour to get all the info I can before making it myself, and you are the first to give troubleshooting tips if its not quite right. Really big help. I wish more people would do that in these cooking videos.

The ingredient list is identical to the Fudge recipe used by my mother-in-law for as long as she could remember and by my wife, since she was a child back in the 1960s. The only difference that I could see is that we add both the butter and chocolate chips after heating the sugar candy to no greater than 235F. My wife does it using a timer, 5 to 6 minutes, and with her eye of experience.

Perfect instructions and trouble shooting hints for this specific fudge recipe. Your instruction fits our experience making this fudge recipe, since forever. Another hint for increased repeatability; always use the same pot and burner setting that was used previously, when a batch came out perfectly.

My mother-in-law always claimed that she got this recipe from someone who worked for Fanny Farmer candy company in nearby Rochester NY. They call it "Fanny Farmer Fudge."

I made your fudge today, followed your cooking rule, finally understand how to get to a soft ball stage. I remember making fudge with my mother in the 60s.

Been searching all over for the fudge recipe that i love cause as you said there are many variations. I’ve made fudge with other bakers/recipes twice and one was just okay and the other i threw away but this is the one I love love love. Thank you so much. I followed along watching your video. I used to make fudge at the fudge kitchen in Frankenmuth, Michigan.
We only used cream, sugar, corn syrup and cocoa powder.
We cooked it to 238 F and pour it on a marble table and let it cool to 120 F
then beat or flip the fudge until it firms up into a loaf for cutting slices.
It always turned out very smooth and creamy.

Hi Matt. Another amazing recipe I can’t wait to try! I usually make the three ingredient fudge, but this looked so easy to make. I laughed when you held up the whole block of fudge to take a bite. I would have done the same thing. 😊 I made the chocolate nut candy today with milk chocolate chips and cashews. Like the cheese ball, they were a huge hit also. There wasn’t a piece left. So happy I found your channel.

Thank you Matt! Made this fudge over the weekend to add to my Christmas goodies to share and it turned out perfectly. I did need to keep stirring for several more minutes after adding the nuts for the fudge to get to the consistency that looked like yours but it did finally thickened up. Love the taste and texture of this fudge and will now be making it every year.

1968---wow. I think I read somewhere that fudge really took off in the 50s and 60s--so that makes sense. Wonderful recipe here!

Thank you for sharing; my mom died before I learned how. And thanks for explaining how to fix it if it turns out a little grainy; my moms was a little grainy.. sometimes I liked that.. I may be thinking of her cake icing.
