It is important to be aware that if the user is fitted with a pacemaker DO NOT cook on an induction hob. Induction cooking employs very powerful magnets that can cause a pacemaker to revert to a datum setting which could be very serious for the user. Beware!

The one 'con' is that you can't slide pans around on it. But you can get a pad for your burners from amazon that keeps you from scratching it if you do slide a pan. I cooked on gas for more than 50 years and now love my new induction stove. I wasn't afraid of the cookware requirements as I've used nothing but stainless or cast iron for years now. I'm a bird owner and the gasses let off by hot nonstick will kill pet birds in the house so I threw out all of those things years and years ago.
And that pad I mentioned above allows me to use my WWII era cast iron. Being a south Texan I do miss being able to heat up tortillas directly over the flame but a comal works fine.
tip: use lower heat with stainless and induction than you might be used to using. You really never need to use really high heat. After 2 months cooking I have yet to have had a reason to turn the burner up even to an 8. I don't mind waiting an extra 30 seconds or a minute, I don't rush around so much that it even matters.

With cast iron cookware on my induction cook top, I put a Teflon mat under it to prevent scratching the ceramic surface. These are called BBQ mats by some of the vendors. You can also use parchment paper under the cast iron cookware. I never rub or shuffle my pots on the ceramic surface unless I have a Teflon or parchment paper protection mat under it.

Induction newbie here - I'm an experienced classic kitchen guy. Thank you for the wonderful video - this was very helpful for me to make the first step into the induction space. Your explanations were very succinct. I'm jumping in with a portable burner to try things out! Cheers!

I'm so glad this video was full of useful info and some cooking demo. Thank you so much. This video provided crucial info for my wife and I to make an informed decision on our next stove.

Some of the induction vs gas videos on YouTube are so useless. I don't need to know how much faster induction will boil water. The important info is temp control for cooking or being able to use my griddle on the cooktop, like this video addressed.

Again, thank you for being awesome.

Great presentation. I have two countertop units that I've used for years. I never used my stove once I started cooking with them.

Thank you for this information. We may be moving to an area where if I want a gas stove, like I’ve had for the last 12 years, we have to use propane, which, for a number of reasons I don’t want. I have been hearing about induction stovetops, but mistakenly thought it was a new word for electric glass cooktops, which I also didn’t want. Now I realize there is a choice better than either of those!

Thanks for the info. In Uganda, with my limited resources, I will shop for the induction cooktop because it boils water fastest, then go shopping for the right pan probably using a tape measure and magnet as well. Just not to be wasteful..

Interesting point there, it does make sense to use induction in place where there's quite a bit of air flow that usually will disturb you if you're cooking using gas.

My partner and I just bought a new house, and tonight we discovered that the stove top is induction. We have been using gas for years but after watching this video I am looking forward to trying our new stove top. I am just relieved that I read the instruction manual before spending hundreds on the wrong cookware hahaha

I just stick a paper towel under my pans. The towels don't burn and prevent scratches. Even help with cleanup cuz it catches splatters and spills.

I recently used a cheap one and I can say make sure you buy a quality induction that allows temp and duration/duty cycle adjust. The cheap ones try to have just one adjustment but at max wattage and only adjust the the duty cycle. It causes weird things like the water to boil off/on for the cycle and for your eggs to stick because it's too high heat. It seems like induction top in this video is simialry with 1 to 9 and p settings.
