Your wood chunks are completely combusted and putting off a thick white smoke. They won’t last long at all this way. You’re supposed to put them around the charcoal so they don’t combust but slowly smolder giving off that thin blue smoke.

I def cant use charcoal due to soot which triggers my asthma like crazy so Im going to try wood instead

The problem I find with the kiln dried chunks is by the time the white smoke stops I only have a little bit of cooking time before they are completely burnt up so I have to add more while my meat is still on the smoker so it gets a lot of that white smoke no matter what. Either way it still doesn’t turn out sooty like something cooked over green wood.

Hi @Cowboy Charcoal, I'm from Malaysia, if I use our local charcoal, or the original wood used for made charcoal; the wood that we usually use is the type from beach side swampy area, is it suitable?. Or, any type from our local area?. Nice to meet you, from Malaysia 🇲🇾🇲🇾🇲🇾🇲🇾🇲🇾🇲🇾
