Indonesian-style peanut sauce:
2 tbsp avocado oil
1 large or 2 medium shallots small dice
5 garlic cloves small dice
1 1/2 Fresno chilis small diced
1 1/2 cups coconut milk
3/4 cup peanut butter (crunchy)
2 tbsp dark soy sauce
2 tbsp sweet soy sauce or kecap manis (sub with regular soy sauce)
2 tbsp lime juice

I just made this, substitute the can of coconut milk for coconut cream, it came out PERFECT!! 10/10

Indonesian here, while certainly peanut butter can be used as an alternative to more sweet and rich taste, we specifically choose to make this peanut sauce with peanut paste made from peanut and other ingredients mentionded blended as one, then you can do accordingly like this video but simmer it longer until the peanut oil leaks out from the sauce because it's precisely what makes our local peanut sauce taste better, then you can adjust the flavor by adding sweet soy sauce and probably some chili or even sambal (Indonesian chili paste, you can make it with literally various ingredients you like to determine the flavor as long there's chili, shallot, and garlic)

A little trivia, if you want to find the best peanut sauce ever in Indonesian, you should try come to Bandung, West Java, find any local and authentic Siomay (steamed fish cake) seller and taste their peanut sauce, the best you can find is the one usually selling for more than 5 years, you can ask them to teach you how to make authentic Indonesian Peanut Sauce, and likely they'll glad to help you! Indonesia is full of warm and open-handed people everytime! Happy cooking and traveling for taste!

You can also use curry paste in place of the shallots onion and pepper. Basically, make a plain red or yellow curry then add peanut butter by the teaspoon and taste. This is how Thai people make peanut sauce.

I think the use crushed peanuts but peanut butter is so much more convenient

Alternatively, you can fry the chilli shallot and garlic whole (fry separately to avoid it from burning), use palm sugar instead of sweet soy sauce (you use soy sauce for sweetness which comes from palm sugar anyway) and use freshly roasted/fried peanut (remove the hull to avoid bitterness) then you can put everything into food processor (or use pestle if you are particular about the textures) stir fried the resulting paste while adding water /coconut milk little by little to desired consistency, and add your seasoning as you go (the salt, pepper, lime or tamarind paste). But hey, this dude really is can cook.

Here Indonesian, traditionally we dont use peanut butter, we use peanut paste that we give it some hot water and mix it to make spicy salty peanut sauce, but yeah is just available in asian country, you can use this recipe for similar sauce, or if you want you can buy freast peanut roast it and grind it with pestle and mortar and make it like this video but without peanut butter

I make these peanut sauces with whatever PB is on hand, but I do prefer controlling the sweetness with natural PB. But I don't let that stop me, and hope you won't either. 🙌🥳🎉🤘 Delicious!!!

Honestly I've made a sauce very similar to this to have with satay chicken and it is epic. Literally works with anything and, other than maybe the coconut milk, you likely already have everything in your cupboards
