Have you ever wondered how Turks enjoy fresh sardines? In this video, I’ll show you two delicious and authentic Turkish sardine menus. First, we’ll bake sardines with vegetables in a clay pot ('güveç') and pan-fry them coated in corn flour, served with a refreshing shepherd’s salad and traditional tarhana soup. In the second menu, we’ll prepare sardine skewers in two styles—wrapped in grape leaves and classic shish with peppers and tomatoes—paired with a tangy arugula onion salad and homemade corn bread loaves. These easy-to-follow recipes bring out the best of Turkish flavors, perfect for seafood lovers!

Ingredients For "Kiremitte Sebzeli Sardalya" Sardines With Vegetables In Clay Pot:
300-500gr. fresh or frozen sardines, deboned (use as much as you want per serving)
1 onion
2-3 potatoes
olive oil to saute
1-2 tomatoes
salt, black pepper, pul biber (chili flakes) to taste
olive oil to season
lemon slices
mild red and green peppers

CORN BREAD:
1/3 each yogurt, vegetable oil, milk
1/3 cup water
1 tsp sugar
1 tsp salt
2 tsp baking powder
1/3 cup flour
about 1+1/2 cup corn flour
butter to grease the pans

ARUGULA ONION SALAD:
Arugula leaves and some purslane
Tomatoes and green peppers
Onions (if you can find use red onion)
Sumac, salt
Couple of olives

FISH SKEWERS:
wooden skewers
fresh sardined debones
tomato and peppers
salt and black pepper to taste
grape leaves to cover
sunflower to grill

In Bulgaria we make fish güveç with rice we also love hamsi and this is a nice dish we prefer them baked and fried or in "plakiya" i like that you used pul biber and oregano in the dish we add lemon slices to the güveç we also have saç with fish

Again a lovely video The food looked delicious Our fresh sardines are seasonal but have traveled from fish markets Our fishing industry has disappeared unfortunately It is available at the coast but in small quantities

Wow! This is amazing! Just love the presentation. It gives such a welcoming feeling and wanting to grab a bite of the sardines, kebab, and everything else. We don't get fresh sardines in Chicago but it would be worth the try at another fishery.😊
