Traditional Greek Vegetarian Soutzoukakia: easy, quick, simple and absolutely delicious

I love Greek cuisine, A LOT..but most of it features meat and since I am not necessarily a meat lover, I often struggle finding Vegetarian recipes in this cuisine. Today I made the vegetarian version of Soutzoukakia which is initially a recipe featuring beef. The vegetarian version uses chickpeas, and all the prep work it takes is to wash and soak chickpeas for 12 hours/overnight, once you get past that, it is all easy to make with very simple steps and tastes so good you can't guess it took chickpeas to make it..coming from someone who doesn't necessarily like chickpeas.

Ingredients:
For the chickpeas:
- 1 cup of chickpeas soaked overnight
- 1 medium onion finely chopped
- 3 tbsp chopped parsley
- 3 tbsp olive oil
- juice and zest of half a lemon
- 1 clove of garlic finely sliced
- 1/2 tsp cumin
- 1/2 tsp baking powder
- salt and pepper to taste
- Flour to dust them before frying
For the tomato sauce
- 2 large tomatoes grated
- 1 medium onion finely chopped
- 3 tbsp olive oil
- 1 clove of garlic finely sliced
- 1/4 tsp chilli flakes
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1 tbsp tomato paste
- 2 bay leaves
- 1 cinnamon stick
- salt and pepper
