How about comparing Star Wars criminal organisations to retro and modern crime groups on Earth?

Looks like someone forgot about the Separatist Parliament of which Dooku is the leader due to founding the movement. Also Grievous was never the head of the Separatists he was just the top general and probably took orders from parliament which if it had enough time would have appointed someone from parliament as head of state or parliament could have just assumed executive powers.

CIS has a dualism of power. There is a parliament like a legislative body, which contains of the definite number of delegates - planets and star systems representatives, just like in the Republic, but on the other hand there is a Separatists Council, which appears to be a shadow government that possesses the supreme position in the political structure of Confederacy.

I was under the impression that the arena executions were more of a geonosian thing as it was they who put Padmé and the the others on trial for Espionage not that any of the separatist Representatives objected as they were already trying to have her assassinated but no other alliance members are shown to practice Arena executions to my knowledge and it seems like the alliance mainly used it's prisoners for slave labor going by what I remember from the Clone Wars animated series.
