Crispy Spicy Cumin Lamb Chinese Style

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
500g Lean Lamb (cut into medium strips)
4 Dries Red Chillies (cut into thin threads)
1 Tbsp Sichuan Peppercorn
100g Leek (cut into 2 inch long threads)
1 Tsp Sesame Sauce
1 Tsp Peanut Sauce
1 Tsp Cumin Powder
1 Tbsp Sichuan Pepper Oil
1 Tbsp Cooking Wine
50g Cornflour
1 Tbsp Sesame Seeds
Salt to Taste

Method:
1. Place the lamb in a large mixing bowl, add 50ml water, a pinch of salt, cooking wine, sesame sauce and peanut sauce. Mix well together and then leave to marinate for 1 hour
2. Place the cornflour onto the lamb, mix well for even coating
3. Heat a litre of oil in the wok over medium heat
4. Place lamb strips into the hot oil one piece at a time, deep fry until crispy, remove and drain. Leave little oil in the wok & discard the rest
5. Place the chillies and Sichuan peppercorns in the wok and stir-fry for few seconds
6. Add lamb and leek and stir, add cumin powder, stir-fry for a minute
7. Add the Sichuan pepper oil and stir
8. Transfer into a dish and serve
