Hey, Bruno! Years ago, I worked for Marriott, and made a pan roasted duck breast, in which I had inserted a "finger" of pear that I poached in red wine. I super-chilled the pear piece to insert it into a small slit down the length of the breast. When done, I would slice the breast for plating - the slices looked really cool - showing the skin-crust of the duck breast, then the medium-rare flesh, then the poached pear. Have you ever heard of anything like this?
