I have to say I often experience the opposite problem! I always request an extra hot cappuccino because, 1- I feel there's more flavor in a hotter coffee (as long as it isn't scalded!), and 2- in order to keep up with a line at the cafe, the baristas will often steam a large pitcher of milk and when they get to yours it's cooled off too much. I requested an extra hot cap at a Starbucks, and had to hold my finger in the drink to prove to the barista that they weren't quite there, yet. I completely agree with the conclusion in this video and some of the other commenters, 150 degrees is just about perfect!

Hi Marc, thank you for the informative video. I own a Bezzera BZ10 for 2 years now and make 1 cappuccino a day but I’m still not happy with the texture of the frothed milk.. The milk texture is not uniform and I often get this blob on the surface.. I can’t get a uniform creamy milk.. i’m always doing small quantity for 1 cup, use skimmed milk, follow the techniques I watched in many videos and stop when it gets hot to hold. Is it a problem with the Bezzera not being good for steaming or my technique is bad? What might I be doing wrong?

I always aim for a temperature of 150F (65 Centigrade) for large and small latte's. Personally speaking I don't like my coffee any cooler. My experience with a stainless steel jug and a thermometer is that when I turn the steam off when the temperature reaches 140F (60C), the temperature of the milk continues to rise by up to, but no more than, 10 degrees F or about 5 degrees C. If the temperature is about 160F (70C) it's not fit for making a latte and the 'sweetness' that's inherent at140F-160F range is gone.

hi, what is the average temperature of steam for frothing milk. im using breville dual boiler, steam boiler setting lowest is 130℃, for me (newbie) hard to control T.T

When I drink coffee at 140 F, I scald my tongue for days? I don't understand. Unless you're drinking the coffee 5 minutes later?
