In this video I show how I make Alder chips for my smoker and how I use them.
I've used many types of chips to make smoked meats. Apple is ok, cherry is bitter. plum is very mild. I've found mesquite to be very strong and more than a couple hours of smoking can make the meat taste bitter. Hickory is nice but alder is by far my favorite.
