On this episode of Basics, we're taking a look at a few ways to simply prepare fish. Whether you're baking or frying, it's an economically and ecologically responsible way to make dinner tonight.

Grocery List:
Salmon fillets
Panko bread crumbs
Thyme, chopped
Rosemary, minced
White fish (high quality like cod or haddock)
Russet potatoes
Peanut or vegetable oil
Kosher salt
Ground black pepper
Grain mustard
Mayo
All purpose flour
Cornstarch
Paprika
Baking powder
Mexican beer (or beer of your choice)
Tartar sauce (optional)

Special equipment:
Stainless steel pot, deep enough for frying
Thermometer for frying oil

A quick tip: if you want to store boiling water, boil an enormous batch in a big pot and freeze it! Voilà, boiling water for any occasion!

I know this video is a couple years old, and it may be the comments might not be viewed as regularly. However, I needed something quick and easy to feed my family and I instantly thought of this first easy recipe. Just tried the salmon as the first meal I've had in a long time that wasn't microwaved or takeout, and as the first time trying salmon at all. Gotta say, not bad.

As a Brit who works in a chippy (fish and chip shop), i have to say those chips are far too dark and thin !! Starting them off in room temp oil allows more oil to be absorbed, which in turn makes the chips a tad too greasy

To get the perfect chippy chips, use room temperature potatoes cut about 1.5-2cm wide. If you prefer traditional chips like you describe (that is, crisp and firm), cook at 150-160 for around 6 minutes/until they float. If you prefer them to be crispy on the outside but soft in the middle it is best to fry them twice: firstly at 130 for 6 minutes, then take them out and rest before refrying at 150-160 for around 4 minutes or until soft in the middle.

Otherwise, love the vid! The fish turned out really great, just needs to be doused in salt and vinegar

I made your panko salmon recipe for my family and they absolutely loved it! They told me a bunch to leave a comment about how much they did and I really enjoyed it as well as a person who can never get enough salmon. It was really quick and easy and I enjoyed making it.

Fun fact: most people with a peanut allergy can actually have things fried in peanut oil because it's the proteins in the peanut that cause the allergic reaction, not the oil
