Using fresh rice is okay if you're using wok with that heat, if you're using home kitchen setup overnight rice is still better

I always cook fried rice with freshly cooked rice. People always find it weird that I do not use the left over. I always find the freshly cooked one easier to cook, and it tastes so much better. every grain get the heat and sauce evenly unlike the left over rice, it always clump together.

Fresh rice is alright, what's bad is using fresh rice as it just finished cooking. Basically you wait for the fresh rice to cool down, or else it will be mushy.
