Here's the recipe I used with ingredient swaps included:
1/2 cup applesauce and 1/3 cup ghee (or 2/3 cup oil)
1/2 to 1 cup sugar, 1/2 cup maple syrup, 1 teaspoon monk fruit sweetener (or 2-2/3 cups sugar)
4 eggs
3 cups shredded zucchini (about 2 medium)
2/3 cup water
3-1/3 cups flour
2 teaspoons baking soda
1-1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoons vanilla extract
1/2 cup chocolate chips
* Preheat oven to 350° F. Grease bottoms of 2 loaf pans (I used a square pan and 2 small loaf pans).
* Mix applesauce and ghee (or oil) with sugar ingredients of your choice. Stir in eggs, zucchini, and water.
* Blend in dry ingredients (flour, baking soda, salt, baking powder, cinnamon) and vanilla to wet ingredients. Stir in chocolate chips.
* Bake for about 45 minutes if using smaller pans (but if using loaf pans, bake about 60 to 70 minutes). Done when knife or toothpick comes out clean.
* Cool and enjoy!
