I make steamed eggs every day. My 3-year-old daughter loves it and calls it the "egg pudding". Our family version adds egg tofu and shrimps in it and also serves with a touch of sesame oil and a spoon of soy sauce on the top.

Put it in the steamer after the water is boiling and turn the heat to low.
High heat steaming will create bubbles.

When I worked at a Chinese takeout the cook would steam the eggs with lobster eggs. The lobster eggs turned bright red when cooked and looked pretty with the yellow eggs!

Okay, hear me out. I've been trying to duplicate Starbucks egg bites in my instant pot. But the texture is always so much firmer ever I make it at home.

I'm gonna see if I can integrate these ideas with my next batch! And/or I'll try making them in one batch in a skillet. thanks! 🍳

Your dad said he uses "暖嘅滾水“ which means warm *boilded* water. Boiled water will vaporize air dissolved and reduce the holes inside the steam egg. This will make the presentation of dish much more beautiful.

Yes, I can confirm asian dads have iron hands, only dad, my mom doesn't have it but my dad does, and he always complain about me unable to pick up steamed dishes using bare hands :'(
