HOMEMADE TAGLIATELLE 🍝 in tomato and speck sauce #recipe

These tagliatelle are so long that a table won't be enough! 🍝 Rolling pin ready, let's start!👇RECIPE👇 @alessandrafontana2036

🔹 INGREDIENTS:
🔸for the pasta dough:
400 grams of all-purpose flour (type 00),
4 eggs,
🔸for the sauce:
300 ml of fresh cream,
200 g of speck,
180 g of smoked scamorza cheese,
Extra virgin olive oil,
20 g of lard,
Salt to taste,
Pepper as needed.

🔹PROCEDURE:
Cut the smoked scamorza cheese into cubes. Also, cut the speck into strips and set both aside. In a pan, melt a knob of lard with extra virgin olive oil and brown the speck. Then, add beer and sugar. Add tomato sauce and let it cook for 30 minutes. At the end of the cooking time, add the fresh cream and reduce the heat.
Cook the pasta in plenty of boiling salted water. Drain the pasta and add it to the tomato sauce. Pour in the scamorza cheese and mix everything together.
When serving, garnish with basil and sprinkle with a generous amount of Parmesan cheese. Serve hot.
