The Best Red beans and rice

14oz Andouille sausage
1 Lb Dry Red beans or 3 Cans (15oz) drained
red beans
2 Tbsp Butter
1 large Yellow Onion
2 celery ribs
1 small red bell pepper
1 small green bell pepper
8 cloves garlic
2 (32oz) Bottles or 7 to 8 Cups Chicken broth
2-4 Bay leaves
Smoked Turkey Leg (Optional)

Pinch Salt
3 Tbsp Flour
2 Tsp Dried oregano
2 Tsp Chicken Bouillon (optional)
1/2 Tsp Dried thyme
1 Tsp Paprika
1 Tsp Ground Cayenne Pepper
1 Tsp Coarse Black Pepper
2 Tsp Onion Powder
2 Tsp Garlic Powder
Pinch Red Chili Flakes

ParsleyGreen Onions

2 cups long-grain white rice (Like Basmati)
4 cups water
1/2 teaspoon salt
1 tablespoon butter (optional)

Steps -

Soak dried beans overnight or use drained canned beans.

Chop onions, celery, bell peppers, and andouille sausage.

In a medium-high pan, cook the sausage for 4-5 minutes or until seared and browned.

Remove the seared sausage from the pan and sauté onions and garlic in the same pan until fragrant with butter. Add the bell peppers and celery, and cook until they soften.

Add flour and cook until the flour is gone. Season and mix until well combined. Reintroduce the andouille sausage and add chicken broth with bay leaves.

Bring the pan to a boil, then add the beans and, if desired, smoked turkey. Reduce the heat to low and cook for 2 hours and 10 minutes, or until the beans and turkey are tender and the liquid thickens into a rich sauce. If the mixture becomes too thick, add more water or broth. Taste and adjust the seasoning as needed. Garnish with parsley and green onions, and serve with rice for a complete meal!

Tip - For a creamier texture, mash some of the beans against the side of the pot using the back of a spoon.

No flour needed- take out 1/2 red beans 🫘 and smash with a potato smasher, that release starch put back into pot, my beans cook 4 hours -slow cooker

My mom made the best red beans ever. She would cook for 3 hours where the beans had a rich gravy . It was awesome with biscuits homemade of course. She was from Louisiana as well.

This looks really good!

Your recipe is pretty close to mine except I don't use chicken broth. I just start it around noon and it's ready around 6. Seasonings make all the difference.
