An omelette can hardly get any better than this homey, comforting mushroom omelette. Cheesy, mushroom-y and simply delicious.

Ingredients:
1 yellow onion (medium, peeled and chopped)
2 cups thinly sliced cremini mushrooms
2 Tbsp butter
1/2 cup white wine
1/2 cup heavy cream
Salt and pepper (to taste)
A pinch of fresh chopped dill (or other herbs)

3 eggs (lightly beaten)
1 cremini mushroom (thinly sliced)
A pinch of fresh chopped dill (or other herbs)
1/2 cup shredded Jack or Cheddar cheese
Salt and pepper (to taste)

Fresh chopped dill (or other herbs)
Fresh thinly sliced green onion
Thinly sliced chili pepper (optional)

Made it again for my husband tonight. He said it was the BEST omelette he’d ever tasted in his life! (He’s in his 60’s). I can cook AND order ❤️

I just made this! It was good, very rich! Don’t try to eat this everyday. I substituted the white wine for chicken stock and white vinegar. Came out great!

Have been making this for 4 years and it’s simply the best recipe! Used to hate omelettes before this and kind of still do but this is the one exception!

I followed this recipe and it was very good! It was my first time and I stuck strictly with the instructions but next time the only change I’ll make is using basil instead of dill. Awesome recipe! Thanks!

Important notice: do not add salt and pepper while you still have runny egg on top, cuz when you try to disperse it afterwards it gonna take all the salt with it and you gonna end up with overly salted bits, best is adding the seasoning near the end of cooking process or while beating the egg

I made this today for lunch! I added sundried tomatoes to the "sauce" with the mushrooms, etc. Since I didn't have dill, I switched it up for dry oregano and rosemary. Served with a side salad of mâche with a citric dressing... DELICIOUS!

Liked ur technique of allowing the excess floating fluid to flow to the sides nd thn cooking it simultaneously...prevents th omelette from getting too thick nd makes flipping the omelette a lot less messier whn cooking in a small pan.

Oh and my husband, who is French snd comes from a line of French chefs said it was the best omelette he’d ever had! The wine, and I happened to have fresh dill, really takes it to a culinary five star recipe! Thanks you so much!!!

Ok, I’ve watched this a few days ago. Still thinking about it. I got good organic eggs 🥚, heavy organic cream, shrooms, getting the jack cheese (love how little goes a long way❤️ for a change). This is more than a recipe. It’s about a mood, with music, with calming joy...the video itself is beautiful. The copper colored pan W/ matching burner ...the lighting even...all clear, beautiful. The cook is great, but equally great is the presentation itself. It got i the folds of my consciousness. 😂🤣😂😇
