Caprese Salad... If It Were A Cocktail

My continuing series on turning my favorite dishes into cocktails, this week featuring the spring & summer classic, the caprese salad.
I love a good caprese salad. Oddly enough, it has all the components of what I look for in a cocktail- great acidity, herbal notes, a creamy texture and just a touch of salinity. Instead of simply infusing the ingredients into a spirit or making a syrup, I thought it would be more fun to create a more abstract vision for this drink. I think the stark white color of the cocktail with the green leaf shaped tuile make quite a statement together and the gooseberry shrub turned out to be so tasty- though i am looking forward to testing out a tomato version once they are in season.
Caprese-ish Cocktail:
1 oz cape gooseberry shrub**
.5 oz whey
1.5 oz gin
Shake and double strain into an absinthe rinsed coupe and garnish with a basil tuile
**Gooseberry shrub:
1 pint of gooseberries- hulled and quartered
130g sugar
Let gooseberries and sugar mascerate for 24-48 hours.
Strain syrup and combine with 1/3 cup apple cider vinegar.
Tartness will mellow over time, so add more or less vinegar if you like.
Bottle and store in the fridge for up to 6 months.
