Caprese Salad... If It Were A Cocktail

My continuing series on turning my favorite dishes into cocktails, this week featuring the spring & summer classic, the caprese salad.

I love a good caprese salad. Oddly enough, it has all the components of what I look for in a cocktail- great acidity, herbal notes, a creamy texture and just a touch of salinity. Instead of simply infusing the ingredients into a spirit or making a syrup, I thought it would be more fun to create a more abstract vision for this drink. I think the stark white color of the cocktail with the green leaf shaped tuile make quite a statement together and the gooseberry shrub turned out to be so tasty- though i am looking forward to testing out a tomato version once they are in season.

Caprese-ish Cocktail:
1 oz cape gooseberry shrub**
.5 oz whey
1.5 oz gin

Shake and double strain into an absinthe rinsed coupe and garnish with a basil tuile

**Gooseberry shrub:

1 pint of gooseberries- hulled and quartered
130g sugar
Let gooseberries and sugar mascerate for 24-48 hours.
Strain syrup and combine with 1/3 cup apple cider vinegar.
Tartness will mellow over time, so add more or less vinegar if you like.
Bottle and store in the fridge for up to 6 months.

Do you think maybe a Hendricks gin would work better? The cucumber floral notes might help enhance the cocktails vegetal taste. Either way, another really well done video. All class!

Wow!! This was awesome! Very creative and I'm totally curious about how this tastes! ... I can definitely see how a gin would overpower those flavors. I don't have much (any :P) experience with shrubbs, I know they're vinegar based so I always figured they'd be too acidic... but i guess the sugar content cuts that a bit.

Wow this is insane! A few weeks ago I came up with a drink based on a caprese with olive oil washed gin, briottet basil liqueur and lemon (1.5oz/1oz/0.75oz) and then shaken with a little bit of cherry tomato in the tin. I had no idea how to get the mozzarella in there but this is genius, never done shrubs before but will have to give it a go! Also we tried your blizzards and bikinis over the weekend and it was a real crowd pleaser!

WOW!!! This is amazing!!! I love this video!!! I would love to see an artichoke cocktail. Artichokes are savory, sweet and bitter at the same time.
