Smoke old school style, rib tips breast plate and all. They way my folks did it when I was a boy. We had no money so it was a real treat.

Dude you have never steered me wrong. I'm 47 and live out in the country in Arkansas. We NEVER ate St Louis style. We always ate cartilage and all. I have watched other videos and got frustrated but this one makes trimming seem a lot easier..plus your loaded potato soup video got me extra sexy time with the missus. THANK YOU AB

I have only just learned this from you recently, and THANK YOU! I have been sharing this with everyone i know who grills or smokes. I used to just trim the fat and cook them, and they came out but not great like i have learned from you!

When I cut my spare ribs into St Louis style I take the rib tips and season them on the grill and then use them for either my baked beans or collards.
